Baby Spinach, Fresh Pea and Feta Cheese Salad 1 41 Oct-01 Excellent and good with frozen peas, too.
Pappardelle with Mixed Wild Mushrooms 1 56 Jan-01 Great!  Looks just like the picture.  Used dried morels (not very tasty), fresh shitakes (very good).  Mushrooms absorbed lemon.  Yum!

Tray-baked Salmon with Olives, Green Beans, Anchovies and Tomatoes 1 97 May-01 Excellent!  Salmon was perfect.  Whole thing so easy!
Pork Chops with Thyme, Lemon and Pesto 1 107 Mar-01 Very good and easy.  Used dried thyme (heaping tbs), and fried on the stove.
North African Lamb with Chili, Ginger, Chickpeas and Couscous 1 111 Apr-01 Excellent!  Used anaheim chilis and would have been better with more chili "bite".  Feeds a lot of people (~6 big appetites)

Spiced Slow-cooked Lamb Shanks 1 116 Jan-01 Very good.  Served on couscous.  Could use more chili pepper, but Becki liked it as is.
My Perfect Roast Chicken 1 120 Apr-01 Great and really quite easy.  Could have used more herbs as quite a bit fit under breast skin and didn't have enough to run on thighs.  5lb chicken took ~70 min.  Also did roasted potatoes and roasted red onions (pg I-153)
Roasted Asparagus with Cherry Tomatoes, Black Olives and Basil 1 144 May-01 Terrific!
Spicy Roasted Squash 1 148 Oct-01 Good and easy.  More like 45min to 1hr in oven.
Roasted Red Onion with Thyme and Butter 1 153 Apr-01 Delicious!  Probably should have roasted for ~45min.
Green Lentils Braised with Rosemary and Garlic 1 162 Mar-01 Great!  Used on scallops (pg I-84)
Cranberry Bean, Pancetta and Rosemary Risotto 1 172 Jan-01 Outstanding!  Might have been even better if I'd figured out that the rosemary and pancetta go in first.  (Have made many times since.)
Mushroom Risotto with Garlic, Thyme and Parsley 1 175 Mar-01 Maybe not as great as pg I-172 but still very good.  Used crimini and shitake 'shrooms.
Spicy Squash Risotto with Thyme and Mascarpone 1 176 Jan-02 Good.  Nice use of roasted squash with subtle flavors.
Minted Asparagus and Pea Risotto 1 176 May-01 Excellent!
Baked Fruit 1 198 May-01 Great!  Make sure fruit is ripe--baking will not soften it.  Baked at 475 for 8 min.
Fruit Crumble 1 210 Sep-01 Good and very easy.  Used 3lb gravenstein apples and 2 pts blackberries in a 9x13 pan.  Used 3/4cup sugar plus some cinnamon on fruit.  Fruit not too juicy--need lemon juice?  But color and flavor wonderful!
Lemon and Lime Cream Tart 1 217 Jun-02 recipe for smaller tart pan so is not so thick.
Watercress, Rocket, Sweet Pear, Walnut and Parmesan Salad 2 64 Jul-01 Wink loved it!  Toasted walnuts very good.

Celery, Celeriac, Parsley and Pomegranate Salad 2 77 Dec-03 Good with nice texture.  Makes a ton of salad--probably half-batch would be better for 2.
Spaghetti with Squashed Olives, Tomatoes, Garlic, Olive Oil and Rocket 2 124 Jun-01 Loved it!  Careful with chili can be too spicey for Becki--probably should use 3/4" chili pepper
Spaghetti with Red Onions, Sun-dried Tomatoes, Balsamic Vinegar and Basil 2 125 Apr-01 Dead simple and very tasty.
Linguine Puttanesca 2 130 Jul-01 Very good.  Used one 1.25" chili--about right.

White Risotto with Lemon Thyme, Sliced Prosciutto, Pecorino and Crumbled Goat's Cheese  2 138 Jul-02 Using both pecorino and parmesan it was very rich--perhaps would be better with just pecorino.
Risotto of Radicchio, Smoky Bacon, Rosemary and Red Wine 2 144 Jun-01 Very good.  Nice blend of flavors.  Drained the bacon fat before frying the rosemary and radicchio.  Used 1/2 lb of bacon--seemed about right.
Fantastic Fish Pie 2 159 Mar-01 Fantastic!  Used halibut cheeks, parmesan, hot english mustard.  Terrific mix of flavors, try with thinner layer of potatoes.
Seared Scallops and Crispy Prosciutto with Roasted Tomatoes and Smashed White Beans 2 160 Jul-01 Good combination of flavors.  Quanty of bean puree a bit skimpy for 4 people--probably should double.  Scallops made a tremendous mess of the stove because I didn't pat them dry before sauteeing.
Salmon Fillet Wrapped in Prosciutto with Herby Lentils, Spinach and Yogurt 2 168 May-02 Outstanding!  Lentils (french) cook in about 20 minutes.  Also added lemon zest--yummy.  Salmon cooked in about 13 min in glass pan--perfect!
Roast Loin of Pork with Peaches 2 172 May-01 Wow!  Very good and easy. Needed 2 hrs to roast 7-rib roast. Peaches in roasting tray (not in roast) need only 30 min. or so to cook.  Will char if they go whole 2 hours.
Tray-baked Pork Chops with Herby Potatoes, Parsnips, Pears and Minted Bread Sauce 2 180 May-01 Excellent!  Pork chops excellent, esp. with minted bread sauce, pears incredible.  But parsnips came out chewy--under or over cooked?
Baked Beetroot wit Balsamic Vinegar, Marjoram and Garlic 2 216 Jul-01 Lovely!  Beets are tart from vinegar but have sweep caramely taste as well.  Beets larger than golf balls--halved them, were not done after 50 minutes in oven.  Couple minutes in the microwave finished them off.  Next time try with a little less vinegar.
Baked Carrots with Cumin, Thyme, Butter and Chardonnay 2 219 Jul-02 Eh!  Not great.  Maybe didn't use enough butter (only 2tbs) or could add some sugar?
Orange and Polenta Biscuits 2 241 Mar-01 Wow!  These are great.  I ove the texture from the coarse polenta.
Chocolate Pots 2 242 Mar-01 Made recipe as directed, and came out solid and very rich.  Made with egg whites came out a little lighter but still rich.  Wink prefers w/o whites, Becki prefers with [so now we make them "with"]
Crème Brulee the Way I Like It 2 251 ?? Fills 8 5oz ramekins.  Cooks in 35-45 min (not all may finish in the same time).
My Favourite Curry Sauce 3 32 May-02 Becki loved it, Wink "just ok".  Curry leaves added very unusual flavor.  Easy to put together.  For "3 green chillies" used 1.5 jalapenos--could have used a little more.  Don't use light coconut milk--makes for runny sauce.
Lemon Rice 3 35 May-02 Great and great with curry sauce.  Regular small lentils will not cook in 1 mintue and stay very crunchy.  Watch out!
Lemon Pickle 3 37 May-02 Wow!  This is SO GOOD!  Refreshing and tasty.  Almost all the same ingredients as curry sauce but tastes very different.
The Best Steak Sarnie 3 53 Jun-02 Made for Liz and Tom before Tom climbed Mt Rainier.  Very tasty, but had trouble pounding steak out thin enough.

Scrummy Warm Rocket Salad 3 100 May-02 Yummy, but I just realized I forgot the parmesan.
Warm Bread Salad of Crispy Pancetta, Parmesan and Poached Egg 3 108 May-02 Great combination of flavors.  Roasting pancetta in oven didn't really work--ended up frying it in a pan.  Used spinach instead of lettuce.
Spaghetti with Salami, Fennel and Tomatoes 3 122 Jul-02 Excellent!  Spicy, juicy sauce.  Loved the crunchy pangritata instead of parmesan.  Used soppresseta from Trader Joe's.
Kinda Spaghetti Bolognaise 3 125 Oct-02 Terrific!  Very thick (even with 28oz tomatoes) and perfect amount for 1lb pasta.
Parsnip and Pancetta Tagliatelle with Parmesan and Butter 3 133 May-02 Very good.  Parsnips are fantastic--could have used more.
Broccoli and Anchovy Orecchiette 3 134 Oct-01 Excellent!  Don't taste anchovies at all--loved it.  [Made many times since.]

Pan-seared Scallops with Asparagus and Baby Leeks 3 161 Mar-02 Very good and easy.  Had 1 "grown up" leed and wished there were more.  Blanced leek 10min, asparagus 2.5 min (2.0 min would be better).
Slow-roasted Duck with Sage, Ginger and Rhubarb Homemade Sauce 3 170 May-02 Delicious!  Wonderful sauce made from dripping.  Used a 4lb (= $28!) Muscovy duck--took 2 hours to roast.
Pot-roasted Pork in White Wine with Garlic, Fennel and Rosemary 3 172 Feb-02 Great!  Easy and makes a nice sauce (which I strained before serving).  Used 3lb leg roast with 7 qt sauce pot (with cover) in the oven.
Superb Marinated Pork Fillet Roasted on Rhubarb 3 174 Jul-03 Forgot the bacon (which is why I chose this recipe--arrgghh!)  Pork was excellent--rhubarb very tart.  Perhaps should add a little sugar?
Pot-roasted Chicken with Sweet and Sour Sauce 3 179 Nov-01 Excellent! And very different.  Used 2 pasilla peppers--one hotter pepper probably OK.  Next time consider turning chicken to brown legs.  Lots of yummy sauce.
Pan-roasted Guinea Fowl with Pomegranates and Spinach 3 186 Nov-02 Very good.  Used chicken, cooked 45 minutes.  Very tender and juicy.  Served over mashed potatoes.
Tray-baked Lamb with Aubergines, Tomatoes, Olives, Garlic and Mint Oil 3 200 Aug-03 Terrific!  Used small loin chops.  Tomatoes still very firm, eggplant perfectly soft.  Mint sauce is terrific.  Lamb excellent.  Cut up garlic cloves.
Minty Mushy Peas 3 205 May-02 Great and easy!
Tray-baked Artichokes with Almonds, Breadcrumbs and Herbs 3 219 Sep-02 Excellent!  Loved it.  Stuffing was just the right amount for artichokes and tasted great.  Cooking in wine was terrific, too.  Baked for 40 minutes.
Hamilton Squash 3 226 Oct-02 Jamie, Jamie, Jamie--what were you thinking?  This didn't really come out--rice never cooked and the flavors didn't blend.
Sweet Cherry Focaccia Breakfast Style 3 254 Jul-02 Delicious for Saturday breakfast on the deck.  Made a half recipe and it was plenty.  Dough from bread machine using recipe on p 236.
Yoghurt with Blueberry Jam and Elderflower Cordial 3 267 Nov-02 This is great!  Refreshing, sweet and tart, light but satisfying.  Made with Nancy's honey yogurt, Wink's Marionberry preserves, and Crème de Cassis.
Fruit Cobbler 3 270 Jul-02 Loved it (especially Wink).  Used extra buttermilk in topping and biscuit came out soft, tasted rich.  Used 4 peaches and 1 pt raspberries plus 1 pt pitted cherries.  Fit into 3 qt corningware casserole.  Use 1.75 cup flower, 3tbs baking power, 1/2 tsp salt for "self-rising flour".
Lovely Lemon Curdy Pud 3 284 Nov-01 Tasted good but didn't rise (no meringuey top).  Used lemon and lime (about half and half).  Used 3/8 cup flower, 3/4tsp baking power, 1/8tsp salt for "self-rising flour".
My New Best Salad 4 22 Jan-03 Something wrong with the proportions here.  Made a half recipe.  Used 1 big shallot (3 lobes) and it was 2x too much.  Only needed 2oz of cheese.  Tarragon was nice.
Minted Pea Soup with Crispy Pancetta, Bread and Sour Cream 4 81 Nov-03 Easy and delicious.  Used about 1.5lbs of frozen peas.
Roast Squash, Sage, Chestnut and Pancetta Risotto 4 123 Nov-03 Bit of a palaver but delicious.  Could have used the whole jar (200g) of chestnuts. B
Lebanese Lemon Chicken 4 164 Jun-03 Made at the beach.  Chicken was good, not exceptional.  Bulgur was excellent!  Used 2 preserved lemons--wonderful, subtle flavor.  Probably should do in a larger dish than 6qt Anolon--had to stack chicken pieces and they didn't get crispy.
Pan-seared Scallops Wrapped in Pancetta with Creamed Celeriac 4 185 Nov-02 Excellent and easy.  Scallops needed 3 min per side.  Used 14 sea scallops and wrapped each in a half slice of bacon.  Served to Tom (who loved it).  Mashed celeriac delightful.
Bailey's and Banana Bread and Butter Pudding 4 277 Sep-02 Yummy!  Creamy, not too sweet.  Made 1/2 batch in 10cup souffle dish.  Used 1/2 loaf of challah, turbinado sugar, half and half in place of cream and milk.
Baked Chocolate Pudding 4 280 Oct-02 Seemed kind of dry but still dark chocolatey--not too sweet.  Baked in ramekins and did not unmold.  Frozen cubes did not pop out of mold--suggest freezing on plain sheet of parchment (only half batch is needed of coffee mixture).
Scrumptious Baked Figs with Mascarpone, Orange, Pistachios and Hot Cross Buns 4 307 Sep-02 Very good.  Easy to put together, interesting texture (like a dry bread pudding) and mix of flavors.  Served to Liz, Tom, and John, who especially liked it.  Used 1/2 loaf of challah, Scharffenberger semi-sweet chocolate, lots more figs.
